Mmm…coconut and honey. Two of my favourite (so good for you) foods. And here’s why:
Coconut is just so nutritious. It’s full of healthy fat, fibre, vitamins (C, E and several of the B’s), as well as minerals such as sodium, selenium, calcium, magnesium & phosphorus. This powerhouse of nature can help to increase your ‘good’ cholesterol, as well as assist in converting ‘bad’ cholesterol to the good type! Add to that it’s potential to assist with the prevention of heart disease and it’s a clear winner.
Honey is one of my favourite pantry items. Not only great for sore throats because of it’s antibacterial properties and hypertonic osmotic action (non-geek speak: it helps reduce inflammation and soreness), it’s also full of vitamins, minerals and amino acids. This is a true powerhouse food that’s fabulous for your health. Raw honey is best and doesn’t cost much more than the regular brands.
So, now that you know why you should be eating these two forces of nature, it’s time for a super yummy recipe that uses…only these two foods (plus a pinch of salt)! Bring on Crispy Coconut Squares. This is my go to recipe when I feel the need for something sweet. They’re AIP, Paleo, Vegan, Gluten and Dairy Free, are super simple to make and really, really delicious. What’s not to love?

Crispy Coconut Squares
Ingredients
- 2 Cups Shaved (or shredded) coconut
- 1/2 Cup Coconut Oil
- 1/4 Cup Raw Honey (or maple syrup)
- 1/8 Teaspoon Sea Salt
Instructions
- Toast coconut in a large pan over low heat until lightly golden
- Pour into a medium sized bowl
- Melt coconut oil over low heat until melted
- Mix honey and salt with the toasted coconut
- Pour coconut oil over the shredded coconut mix and stir to combine
- Line a 20cm (8”) baking pan with baking paper
- Pour coconut mix into baking pan
- Place another piece of baking paper over the coconut mix and press down evenly over the whole pan
- Refrigerate for 1-2 hours or until set
- Cut into 24 small (or 12 large) squares
- Store in refrigerator & try to keep your hands off them!
